So far the transition to vegetarian has gone pretty smoothly. Monday I made "chicken" and brown rice fajitas on wheat tortillas, and last night, wheat pasta with "meat sauce" I whipped up a batch of textured vegetable protein (TVP) for the meat substitute and it wasn't bad at all. It worked especially well on the taco salad I had for lunch yesterday - sprinkled with a little veggie cheese and I was set. I did have yogurt yesterday twice and i made no pudge brownies with yogurt, but as soon as I use what i have now i'll make the switch to soy yogurt and try to make the leap to vegan.
i must say i feel better, as silly as that may sound, without all the heavy animal proteins. i have been using wheat pasta for a long time now, and wheat tortillas so that hasn't been too drastic a change for D, plus he happily gets his real meat in his lunch, plus with all the (organic) meat we are getting soon (part of half a pig and half a cow)he is guaranteed that i'm not forcing him to switch to vegetarian. Like everything else in my life right now, I'll just take it a day at a time and see how far I get :-)
