i just made a big pot of rainy-day goodness!
4 cups (one big carton) of organic low sodium veg. broth
1 tube gimme lean veggie sausage
4 big red potatoes diced
3 cloves of garlic chopped
onion powder because my onion was rotten :-(
italian seasoning
red pepper flakes
rooster sauce (chinese chilli sauce with a rooster on the bottle)
liberal dose of course black pepper
big bunch of kale that i ran a knife through
i combined garlic and red pepper in a dutch oven - you could use olive oil, i don't cook with fats so i left it out, after it starts to get hot add a little veggie broth - i think white wine would also be good...add the potatoes and more broth, when potatoes are fairly tender add sausage and crumble - add seasonings and i added a liberal shake of rooster sauce (i wanted something spicy) add chopped kale and cook covered until tender - then enjoy!!
i wasn't sure how the gimmie lean would work -it was good but next time i'll try to find veggie italian sausage. if you like the tuscan soup at olive garden you should give this a try :-)

i got these great Kashi Party crackers, Mediterranean bruschetta flavor - topped one with a dollop of red pepper hummus, a slice of cucumber and some feta crumbles...omg. i didn't make it to the mediterranean market brunch today but this was almost as good. go get some - they are worth the 4 bucks!
