deciding to go back to school was such a push to get myself more organized, especially around the house. earning a degree in human nutrition and foods is a constant reminder to prepare healthful meals, and being a vegetarian, and eating a very low fat diet makes it more difficult to eat out, but it is so frustrating sometimes when i'm tired and it is dinner time and d wants to know what we are doing....those veggie subs from subway just seem like a quick easy fix. so maybe planning out my menus someplace other than my mind will help me stay accountable....who knows but i'll try it this week.

tonight:
i got some whole wheat pizza dough at trader joe's yesterday, so i'm going to make pizza with mashed black beans, some chili and cumin seasoned smart ground veggie substitute, baby spinach and lettuce, chopped tomatoes and some chipotle salsa

sunday:
whole wheat and flax rotini, roasted red pepper sauce
steamed squash and zuchinni with garlic and herbs

monday:
d goes to morgantown and i have zumba and step aerobics so something light -
big chopped salad with spinach, bell pepper, fat free feta cheese and cherry tomatoes from my mother in law's garden, drained and rinsed kidney beans, dried cranberries, green apples....pretty much the kitchen sink

tuesday:
vegan boca burgers on 100% whole wheat kaiser rolls
smashed red potatoes with garlic
steamed broccoli

wednesday:
i'm going to charleston -i'll put some smart ground veggie chili in the crockpot and pull some homemade corn muffins out of the freezer to thaw

thursday:
another thing of trader joe's pizza to use, herb garlic, so i'm going to make calzones with roasted red peppers, spinach, artichoke hearts, fat free feta and some cannelini beans

friday:
whole wheat pasta
spinach and pureed white bean sauce
chopped tomato, cucumber and yellow bell pepper salad
